Spice pecan cake with warm pecan cinnamon applesauce topping

Sugar Free Pecan Cake:

Ingredients:

・ 1 sugar free spice cake mix

・ 1-12 ounce can of lemon/lime soda pop

・ 1-16 ounce jar of unsweetened applesauce

・ 1 ½ teaspoons cinnamon

・ 1 cup of coarsely chopped pecans

・ 1 cup of pecan halves.

Sugar Free Pecan Cake:

Directions:

Preheat oven according to directions on the cake mix. Pour cake mix into a large mixing bowl. Using fork break up all the lumps in the mix. Slowly pour the can of soda pop into the cake mix stopping to make sure that the fizz does not over flow the bowl. Once all the soda is in the bowl mix with a wooden spoon until well blended. (do not add any other ingredients called for on the back of the cake mix) Add the one cup of coarsely chopped mixture to the cake mix and pour into a greased 9 by 13 cake pan and bake according to directions. Remove from the oven and allow to cool until cake is only slightly warm.

Topping

In a medium size sauce pan combine applesauce cinnamon and pecans. Heat over medium low heat until the applesauce is warmed through and the cinnamon is well blended into the applesauce.

Cut squares of warm cake and place on dessert plates, spoon warm applesauce topping over the top and serve warm.

This cake cuts out a lot of calories by using diet pop in place of the other cake mix ingredients such as eggs and oil. In addition, by not using oil you cut out most of the saturated fat in this recipe and all of the sugar while still providing a sweet dessert that will warm your family inside and out no matter how cold the temperature is outside.
