Wonderful sugar free blueberry cake that taste delicious and is low in fat and easy to make.The good news about cake is that you can enjoy it even if you are looking for a sugar free version.

It used to be the case that if you couldn’t eat sugar, perhaps because you were a diabetic, or intolerant to sugar, that you would have very few options.

These days however there are a number of options when it comes to getting a delicious cake that tastes sweet, but in fact is sugar free!

This is because a number of new sugar substitutes have been launched onto the market which make it easy to measure out ingredients for recipes in the same way that you would with sugar.

Let’s take a look at how you can make a Sugar Free Blueberry Cake that tastes delicious!

Sugar Free Blueberry Cake:

1/ Preheat your oven to 180 degrees centigrade in preparation for the cake mix.

2/ Stir together the following ingredients:

A cup of butter

A cup of whole milk

3 medium eggs

A cup and a half of a 1-1 sugar substitute

Check your local supermarket for options. There are now a whole range of options that you can explore, so it is well worth trying out the various substitutes first, before trying this recipe so that you can see which you like best.

Most of the substitutes are based on two primary sweeteners (Aspartame and Saccharin) and there are differences between the tastes of the different products.

You will find that some of the artificial sugar products have a slightly bitter aftertaste, and so it is well worth making sure that you like the taste before proceeding.

3/ Add in a teaspoon of vanilla extract, 3 and half cups of plain flour, one and half teaspoons of baking powder, 2 large cups of blueberries ( add extra according to taste – these are always better when they are fresh, so if you can make this recipe in the summer then you will find that the resulting Blueberry Cake will taste much better) and mix together.

4/ Spread the above mix evenly into a 10 x 12 inch baking tray.

5/ Take another one cup of sugar substitute and mix with a cup of flour , three teaspoons of ground cinnamon and three quarters of a cup of softened butter.

6/ Once these have been mixed together spoon the extra mixture over the top of the other mix in the baking tray and breathe a sigh of relief, because the hard bit has now been done!

You should now place the baking tray into the oven that has been pre-heated to 180 centigrade and leave to bake in the oven for 40 minutes.

You should check the Sugar Free Blueberry Cake periodically to check that the cake isn’t burning, and also to check that it is cooked right through to the center.

Stick a fork into the center of the cake to check it is cooked through and when it comes out clean then the cake is ready!
