We can’t consider anything more yummy and delicious than a proper pudding to finish a meal with. Any version of pudding would go for a sweet tooth, as always, they would indulge to their fullest.

If you have special dietary requirements, then you may try gluten-free puddings. Here you will get my version of gluten-free pudding recipe. I hope you will have a lot's of fun while preparing this special healthy dessert.

Ingredients:

Gluten-free Breadcrumbs (not dry) - 2 cups (140gm)

Milk or skim milk - ½ cup (125ml)

Bicarbonate of soda - 1tsp

Over-ripe banana - 1 (Large)

Mixed dried fruit - 2 cups (380gm)

Ground ginger - ½ tsp

Ground cinnamon - ½ tsp

Procedure:

At first, grease lightly a 1.25 litre capacity pudding mould or basin. Pour the milk and soda in a jug. Combine them well. Mash the banana. Mix the gluten-free breadcrumbs with fruit, spices, milk mixture and banana in a bowl. Mix them properly.

Now spoon the mixture into the prepared pudding mould. Cover the top of the pudding with pleated baking paper and foil. Sealed it with some string or lid then. Place the basin in a large saucepan with enough boiling water to come halfway of that mould.

Lid down now. Boiled it for 2 hours. Replenish water if necessary during cooking time. Turn the pudding out of the pot and serve warm with some custard. This can make a week ahead then keep it refrigerated.
