Here is a great vegan recipe for all those who love spicy food. Full of the goodness of organic brown rice, paprika, cayenne, and lots of other spices which are full of antioxidants. Plus this cajun rice is very filling and will keep a person going for hours. If you love Cajun food you will love this rice.
Ingredients:
7 - Cups of Cooked Organic Brown Rice - or 3 cups of uncooked rice for pressure cooker method.
2 - Large Organic Red Bell Peppers - Chopped Very Fine
2 - Cups of Organic Celery - Chopped
1 - Large Organic Yellow Onion - Chopped Very Fine
1 - Cup of Organic Green Onions - Chopped
1 - Medium Organic Tomato - Chopped
4 - Teaspoons of Organic Paprika Powder - Mild or Spicy
1/2 - Teaspoon of Organic Garlic Powder
6 - Cloves of Organic Garlic - Minced
2 - Cups of Organic Celery - Chopped
1 - Teaspoon of Organic Mild Chili Powder
1/2 - Teaspoon of Organic Black Pepper
1 - Teaspoon of Organic Dried Oregano Leaves - Crushed
1 - Teaspoon of Organic Ground Thyme
Spray Organic Olive Oil to Spray the Pan
Salt and Pepper to Taste
(Optional) - 1 - Teaspoon of Organic Cayenne Pepper - For those who like it spicy.
Filtered Water for Pressure Cooker Method
Traditional Method of Cooking
Take a large pan and spray the bottom of the pan with organic olive oil. Then take the onion, celery, bell pepper and garlic and sauté them in a large pan until the onions are translucent. Then add in all the spices and the tomato and cook until everything is incorporated and looking great. Add in the rice and mix well, with just a little bit of extra water to make everything mix evenly. Now is the time to add the cayenne if you want this rice spicy. Then let it cool a bit and add the chopped green onion—That’s It.
Serves 12 people
Electric Pressure Cooker Method
Take 3 cups of uncooked rice, and add all the ingredients except the green onions. For 3 cups of rice you will need to add 4 cups of filtered water, then place your electric pressure cook on the setting for brown rice according to the directions for your pressure cooker. For my instant pot, it takes 34 minutes on low pressure— and I don’t have to add any additional oil. And pressure cooking holds in more nutrients and vitamins than regular cooking. Once everything is cooked add the cayenne pepper and green onions—That’s It.
