Give thanks for summer – a time of healthy eating! There are fresh veggies in the garden, farmer’s markets are open on the weekend and there is no excuse to increase your fresh fruit and vegetable consumption.

Try this summer coleslaw recipe – a departure from the usual.

Strawberry Sesame Coleslaw

  • 1/3 head green cabbage – finely shredded or finely sliced
  • 2 organic carrots peeled and grated
  • 2 stalks celery - diced
  • 1/2 apple diced
  • 1/3 cup toasted sesame seeds or 1/3 cup sunflower seeds
  • 1/3 cup walnut pieces chopped
  • Dressing:
  • 1/4 cup organic mayonnaise
  • 3 teaspoons tamari sauce
  • Juice of one orange
  • Juice of one lime or substitute 4 tbsp vinegar for citrus juices
  • 1 tbsp sesame oil – or olive oil
  • Salt and pepper to taste

Combine all ingredients coating the cabbage and other items entirely in the dressing. Chill for at least 20 minutes. Before serving, garnish with a sprinkling of fresh raspberries or strawberries.
