Pasta is a food that has its origins in the Mediterranean but has grown to become a food eaten in countries all over the world. Originally made from two ingredients, flour and water, pasta is inexpensive and can be flavored with a number of sauces and creams. It originated as the poor man's food in southern Italy because it was easy and inexpensive to make.

Pasta cooked in traditional tomato basil sauce

Ingredients
• Pasta

• Whole wheat flour (atta) 2 cups

• Refined flour (maida) 3/4 cup

• Salt 1 teaspoon

• Olive oil 2 teaspoons

• Eggs 2

• Sauce

• Tomatoes 6 medium

• Olive oil 2 teaspoons

• Onion ,finely chopped 1 medium

• Garlic,finely chopped 3-4 cloves

• Red chilli flakes 1 teaspoon

• Fresh basil leaves,shredded 5-6

• Black peppercorns,crushed 1 teaspoon

• Salt to taste

Method

1. Firstly you must sieve both the flours together. Then, add salt, one teaspoon oil and add the eggs one by one. Sprinkle water and knead into a soft dough.
2. Rest the dough, covered with a wet cloth, for thirty minutes. Knead the dough well once again.
3. Sprinkle dry flour and roll the dough into as think a sheet as possible. Trim the sides to form a rectangle. Sprinkle dry flour liberally and using a rolling pin roll it up tightly.
4. Boil lots of water , add one teaspoon oil and salt. Add the pasta into the boiling water and stir.
5. To make the sauce blanch the tomatoes for two minutes in boiling water. Drain, peel, remove seeds and chop roughly. Heat oil in a non-stick pan, add onion and garlic and sauté till they turn translucent. Add red chili flakes and toss well.
6. Finally, add the basil, reserving some for garnishing. Add the tomatoes and cook till the mixture starts bubbling. Add the crushed peppercorns, salt and mix well. Add the cooked pasta to the sauce and toss over high heat till it is heated through. Adjust seasoning and serve hot garnished with the reserved basil.

Indian Pasta

• Pasta,boiled 200 grams

• Green chillies 3-4

• Onion 1 medium

• Garlic 20-25 cloves

• Extra virgin olive oil 3 tablespoons

• Tomato concasse 1/2 cup

• Tomato ketchup 3 teaspoons

• American corn kernels,boiled 1/2 cup

• Pesto sauce 3 teaspoons

• Mustard sauce 1 teaspoon

• Cream 1 cup

• Parmesan cheese,grated 1/4 cup

• Salt to taste

• Fresh basil leaves a few

MethodRoughly chop green chillies and onion and put in a chopper. Add garlic and chop finely. Heat extra virgin olive oil in a non stick pan, add green chilli-onion-garlic and sauté for 1-2 minutes. Add tomato concasse, tomato ketchup, mix and continue to sauté. Add American corn and pesto sauce and mix. Add pasta and mix well. Add mustard sauce, cream, Parmesan cheese and salt and mix well. Garnish with basil leaves and serve hot.
