Here is a super fast recipe that will warm the heart and body of all the people in the family… they will love it. I’ve shared this stew with lots of people and they all rave about it. And it’s full of great nutrition of carrots, potatoes, and cassava. And this recipe will keep you going for hours with lots of energy. Along with a nice salad, this is a complete meal.

Ingredients:

3 - Cups of Sliced Organic Carrots

3 - Cups of Organic Russet Potatoes - Cubed- leave the skins on… lots of vitamins and minerals are contained in potato skins.

3 - Cups of Cooked Organic Cassava cut into Cubes, also known as Yuca, or Tapioca Root and can be found at Asian and Latin Markets. But any other root such as turnips or rutabagas will also work great.

8 - Oz of Organic Mexican Salsa - Either Mild, Medium, or Hot if you like it really spicy.

1 - Organic Salt-Free Veggie Bouillon Cube

Enough Filtered Water to Cover Everything

Salt and Pepper to Taste - Go easy on the salt it’s not that great for us.

Place everything in a large pot and cook until tender… let cool and serve.

If using an electronic pressure cooker to preserve more nutrients cook on low pressure for 40 minutes.
