Here is a great low-fat whole-foods-plant-based recipe that will make your heart sing. Full of the goodness of mesquite powder which is full of lots of nutrients and wonderful low-fat peanut butter. Without the spikes in blood sugar that a person normally would have with sugar and honey… mesquite powder is sweet and keeps insulin level stable. And mesquite powder is full of great fiber, minerals, and has a low glycemic index of 25. And these little squares of goodness are easy to make and your kids will love them… and don’t feel guilty about giving these treats to your kids they are very nutritious.

Ingredients:

1 - Cup of Mesquite Powder - Mesquite powder can be found on Amazon and eBay and other places on-line and at some health food stores.

1 - Cup of Organic Natural Peanut Butter - Open the jar and pour off the oil thus making a much lower fat peanut butter which works great for baking.

3 - Cups of Organic Oatmeal - Regular Organic Flatten Oats Work Great.

2 - Medium Organic Pears - Place in a blender with 2 cups of water and blended until smooth… this works great instead of using oils.

2 - Cups of Organic Egg Replacement Powder

1 - Teaspoon of Organic Baking Powder

2 - Teaspoons of Organic White Vinegar

1/4 - Teaspoon of Himalayan Salt - contains lots of trace minerals.

2 - Cups of Filtered Water

1 - Teaspoon of Organic Vanilla Extract

(Optional) 1/2 - Teaspoon of Stevia or any other natural sweetener if you like your bars even sweeter.

Take the mesquite powder and add the low-fat peanut butter and use your hands to incorporate the peanut butter into the mesquite powder. This is a very yummy combination because mesquite powder has a nutty brown sugar flavor.

Now, take this mixture and add all the rest of the ingredients. Mix well and quickly and pour it into a 9x9x3 inch baking pan. Bake at 375 degrees for 45 minutes or until a toothpick comes out clean from the center.

Let cool— then cut into squares and serve.
